Description

A fresh and satisfying brunch dish featuring toasted bagels layered with creamy avocado, smooth cream cheese, and crisp vegetables for a colorful, nourishing meal.

Ingredients

Scale
  • 2 plain bagels (about 100 g each), sliced in half
  • 2 ripe avocados (about 200 g total), mashed
  • 4 tablespoons cream cheese (60 g), softened
  • 1 tablespoon fresh lemon juice (15 ml)
  • 1 tablespoon olive oil (15 ml)
  • 1 cup cherry tomatoes (150 g), halved
  • 1 small cucumber (100 g), thinly sliced
  • 2 tablespoons red onion (20 g), finely sliced
  • 0.5 teaspoon salt (3 g)
  • 0.25 teaspoon black pepper (1 g), freshly ground
  • 0.25 teaspoon red pepper flakes (1 g), optional
  • 2 tablespoons fresh parsley or chives (10 g), chopped

Instructions

  1. Toast the bagel halves until golden, crisp on the edges, and warm in the center.
  2. In a mixing bowl, mash the avocados with lemon juice, olive oil, salt, and black pepper until creamy with a little texture.
  3. Stir the cream cheese briefly to make it smooth and spreadable.
  4. Spread an even layer of cream cheese over each warm bagel half.
  5. Spoon the avocado mixture generously over the cream cheese.
  6. Top with cherry tomatoes, cucumber slices, and red onion.
  7. Finish with red pepper flakes and fresh herbs, then serve immediately.

Notes

  • Use ripe avocados that yield slightly when pressed for the best texture.
  • Assemble the bagels just before serving to keep them crisp.
  • Taste and adjust seasoning in the avocado mixture before spreading.
  • Swap herbs or vegetables based on what you have on hand.
