  • Sweet corn kernels – 1 cup, cooked or canned and drained
  • Avocado – 1 large, ripe and diced
  • Red onion – 1/4 cup, finely chopped
  • Cherry tomatoes – 1 cup, halved
  • Fresh cilantro – 1/4 cup, finely chopped
  • Fresh lime juice – 2 tablespoons, freshly squeezed
  • Olive oil – 1 tablespoon
  • Ground cumin – 1/2 teaspoon
  • Salt – 1/2 teaspoon, or to taste
  • Black pepper – 1/4 teaspoon, freshly ground

Instructions

  1. Add the black beans and sweet corn to a large mixing bowl.
  2. Gently fold in the diced avocado, chopped red onion, and halved cherry tomatoes.
