Ingredients
- Black beans – 1 1/2 cups, cooked and rinsed
- Sweet corn kernels – 1 cup, cooked or canned and drained
- Avocado – 1 large, ripe and diced
- Red onion – 1/4 cup, finely chopped
- Cherry tomatoes – 1 cup, halved
- Fresh cilantro – 1/4 cup, finely chopped
- Fresh lime juice – 2 tablespoons, freshly squeezed
- Olive oil – 1 tablespoon
- Ground cumin – 1/2 teaspoon
- Salt – 1/2 teaspoon, or to taste
- Black pepper – 1/4 teaspoon, freshly ground
Instructions
- Add the black beans and sweet corn to a large mixing bowl.
- Gently fold in the diced avocado, chopped red onion, and halved cherry tomatoes.
- Sprinkle the chopped cilantro over the mixture.
- In a small bowl, whisk together lime juice, olive oil, ground cumin, salt, and black pepper.
