Description

A soft, moist blueberry quick bread made extra light with sparkling water, perfect for breakfast, snacking, or a cozy homemade treat.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup granulated sugar
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 0.75 cup sparkling water
  • 1 teaspoon vanilla extract
  • 1.5 cups fresh blueberries
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.
  3. In a separate bowl, whisk the eggs, vegetable oil, sparkling water, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Fold in the blueberries and lemon zest carefully to avoid crushing the berries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Toss blueberries lightly in flour before adding to prevent them from sinking.
  • Avoid overmixing the batter to keep the bread tender.
  • Allow the bread to cool completely for clean slices.
  • Store wrapped at room temperature or refrigerate for longer freshness.
