- 3 to 3.5 pounds chuck roast
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 large carrots, sliced
- 3 celery stalks, sliced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 3 pounds potatoes, peeled and cubed
- 4 tablespoons butter
- 1 cup warm milk
- 1 teaspoon salt (for potatoes)
- 1/2 teaspoon pepper (for potatoes)
Instructions
- Season the chuck roast generously with salt and pepper on all sides.
- Heat olive oil in a Dutch oven over medium high heat and sear the roast for 4 to 5 minutes per side until golden brown.
- Remove the roast and add the onion, carrots, and celery. Cook for 5 minutes until softened.
- Add garlic and cook for 30 seconds, then stir in tomato paste and cook briefly until fragrant.
- Pour in the beef broth, scraping up any browned bits. Add thyme, rosemary, and bay leaves.
- Return the roast to the pot, nestling it into the vegetables. Liquid should reach halfway up the sides.
- Cover and simmer on low heat for 2.5 to 3 hours until the beef is fork tender.
- Meanwhile, boil the potatoes in salted water for 15 minutes or until tender. Drain well.
- Add butter, warm milk, salt, and pepper to the potatoes. Mash until smooth and creamy.
- Remove bay leaves from the pot. Shred or slice the roast. Serve over mashed potatoes with plenty of braising liquid.
