- 1 large head cauliflower
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, juiced
- 2 red bell peppers, roasted
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Trim the cauliflower, keeping the core intact, and slice it into 3/4 inch thick steaks.
- Mix olive oil, smoked paprika, garlic powder, salt, and pepper in a small bowl.
- Brush both sides of each cauliflower steak with the seasoned oil mixture.
- Place steaks on the baking sheet and roast for 15 minutes. Flip and roast for another 15 minutes until golden and tender.
- Blend roasted red bell peppers with lemon juice and a pinch of salt to make the puree.
- Plate by spreading the red pepper puree on the dish, topping with the cauliflower steak, drizzling with lemon juice, and garnishing with parsley.
