Description

Cheesy Skillet Baked Eggs is a comforting one-pan dish made with gently baked eggs nestled in a rich tomato sauce and topped with melted mozzarella and cheddar cheese, perfect for breakfast, brunch, or a cozy light dinner.

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium bell pepper, diced
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in an oven-safe skillet over medium heat, then add the chopped onion and bell pepper and cook for 4 to 5 minutes until softened.
  3. Add the minced garlic, paprika, salt, and black pepper, stirring for about 30 seconds until fragrant.
