Ingredients
Scale
- 6 large eggs
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 medium bell pepper, diced
- 1 cup tomato sauce
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in an oven-safe skillet over medium heat, then add the chopped onion and bell pepper and cook for 4 to 5 minutes until softened.
- Add the minced garlic, paprika, salt, and black pepper, stirring for about 30 seconds until fragrant.
- Pour in the tomato sauce and let it simmer gently for 5 minutes to develop flavor.
- Sprinkle half of the mozzarella and cheddar cheese evenly over the sauce.
- Use a spoon to create small wells in the sauce and crack one egg into each well.
- Top with the remaining cheese and transfer the skillet to the oven.
- Bake for 10 to 12 minutes until the egg whites are set and the yolks are slightly soft.
- Remove from the oven, garnish with chopped parsley, and serve warm.
Notes
- Use room temperature eggs for more even cooking.
- Grate cheese fresh for better melting and flavor.
- Adjust baking time depending on how runny you prefer the yolks.
- Serve with crusty bread or flatbread for dipping.
