- 2 medium zucchini, grated and squeezed dry
- 450 g ground chicken
- 120 g shredded mozzarella cheese
- 80 g grated cheddar cheese
- 2 large eggs
- 60 g all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons olive oil for cooking
Instructions
- Grate the zucchini and place it in a clean kitchen towel, then squeeze firmly to remove as much moisture as possible.
- In a large mixing bowl, combine the ground chicken, squeezed zucchini, mozzarella cheese, cheddar cheese, eggs, flour, garlic powder, onion powder, salt, and black pepper until evenly mixed.
- Heat the olive oil in a nonstick skillet over medium heat until hot.
- Scoop about 2 tablespoons of the mixture and gently shape into small patties.
- Place the patties into the skillet and cook for 3 to 4 minutes per side until golden brown and fully cooked.
- Transfer the fritters to a plate and let them rest briefly before serving.
Notes
- Squeeze the zucchini very well to avoid soggy fritters.
- Cook over medium heat so the fritters cook through without burning.
- Do not overcrowd the pan to keep the edges crispy.
- Reheat leftovers in a skillet or oven for best texture.
