Description

Ingredients

  • Chicken breast, 500 grams, cooked and sliced
  • Romaine lettuce, 4 cups, chopped

  • Corn kernels, 1 cup, cooked
  • Avocado, 1 large, diced
  • Olive oil, 2 tablespoons
  • Chipotle powder, 1 teaspoon
  • Smoked paprika, 1 teaspoon
  • Garlic powder, 0.5 teaspoon
  • Ground cumin, 0.5 teaspoon
  • Salt, 0.75 teaspoon
  • Black pepper, 0.25 teaspoon
  • Greek yogurt, 0.5 cup
  • Lime juice, 2 tablespoons
  • Honey, 1 teaspoon

Instructions

  1. Season the chicken by coating it with olive oil, chipotle powder, smoked paprika, garlic powder, cumin, salt, and black pepper until evenly covered.
  2. Cook the chicken in a skillet over medium heat for 6 to 7 minutes per side until fully cooked and golden, then remove from heat and let it rest.
  3. Prepare the vegetables by chopping the romaine lettuce, halving the cherry tomatoes, slicing the red onion, cooking the corn if needed, and dicing the avocado.
  4. Make the dressing by whisking together Greek yogurt, lime juice, honey, and a small pinch of chipotle powder until smooth and creamy.
  5. Assemble the salad by adding lettuce, tomatoes, onion, corn, avocado, and sliced chicken to a large bowl.
