Description

Ingredients

  • Zucchini, 600 g, sliced into 1 cm thick rings
  • All-purpose flour, 120 g
  • Eggs, 2 large, about 100 g without shells
  • Breadcrumbs or panko breadcrumbs, 150 g
  • Grated Parmesan-style cheese, 50 g
  • Garlic powder, 5 g
  • Sweet paprika, 4 g
  • Salt, 6 g
  • Black pepper, 2 g
  • Olive oil, 30 ml
  • Plain yogurt, 200 g
  • Mayonnaise, 60 g
  • Lemon juice, 20 ml
  • Garlic, 1 small clove, about 3 g, finely grated
  • Fresh parsley or dill, 10 g, finely chopped
  • Salt for dip, 3 g
  • Black pepper for dip, 1 g

Instructions

  1. Wash the zucchini thoroughly, slice into even rings about 1 cm thick, and pat dry with paper towels to remove excess moisture.
  2. Prepare three bowls, one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated cheese, garlic powder, paprika, salt, and black pepper.
  3. Dip each zucchini ring into the flour, then into the egg mixture, and finally coat evenly in the seasoned breadcrumb mixture.
  4. Heat olive oil in a large pan over medium heat or preheat the oven to 200°C.
  5. Cook the zucchini rings in batches for 2 to 3 minutes per side until golden and crispy, or bake for 20 to 25 minutes, flipping halfway through.
  6. Transfer cooked rings to a rack or paper towels to drain excess oil.
  7. In a bowl, whisk together yogurt, mayonnaise, lemon juice, grated garlic, chopped herbs, salt, and black pepper until smooth and creamy.
  8. Chill the dip for 10 minutes, then serve alongside the warm zucchini rings.
