Ingredients
- Zucchini, 600 g, sliced into 1 cm thick rings
- All-purpose flour, 120 g
- Eggs, 2 large, about 100 g without shells
- Breadcrumbs or panko breadcrumbs, 150 g
- Grated Parmesan-style cheese, 50 g
- Garlic powder, 5 g
- Sweet paprika, 4 g
- Salt, 6 g
- Black pepper, 2 g
- Olive oil, 30 ml
- Plain yogurt, 200 g
- Mayonnaise, 60 g
- Lemon juice, 20 ml
- Garlic, 1 small clove, about 3 g, finely grated
- Fresh parsley or dill, 10 g, finely chopped
- Salt for dip, 3 g
- Black pepper for dip, 1 g
Instructions
- Wash the zucchini thoroughly, slice into even rings about 1 cm thick, and pat dry with paper towels to remove excess moisture.
- Prepare three bowls, one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated cheese, garlic powder, paprika, salt, and black pepper.
- Dip each zucchini ring into the flour, then into the egg mixture, and finally coat evenly in the seasoned breadcrumb mixture.
- Heat olive oil in a large pan over medium heat or preheat the oven to 200°C.
- Cook the zucchini rings in batches for 2 to 3 minutes per side until golden and crispy, or bake for 20 to 25 minutes, flipping halfway through.
- Transfer cooked rings to a rack or paper towels to drain excess oil.
- In a bowl, whisk together yogurt, mayonnaise, lemon juice, grated garlic, chopped herbs, salt, and black pepper until smooth and creamy.
- Chill the dip for 10 minutes, then serve alongside the warm zucchini rings.
