No-bake Date Bark “Snickers-style” Bars made with chewy Medjool dates, creamy peanut butter, crunchy peanuts, and a glossy dark chocolate topping for a naturally sweet, satisfying treat.
Ingredients
- Medjool dates, 2 cups, pitted and halved
- Creamy peanut butter, 1 cup
- Roasted peanuts, 3/4 cup, chopped
- Dark chocolate chips, 1 1/2 cups
- Coconut oil, 1 tablespoon
- Sea salt, 1/2 teaspoon
Instructions
- Line a baking sheet with parchment paper and arrange the halved dates close together, cut side up, pressing them into a compact rectangle.
- Spoon the peanut butter over the dates and spread it evenly so it fills the gaps and coats the surface.
- Sprinkle the chopped peanuts evenly over the peanut butter layer and press them lightly so they stick.
- Place the dark chocolate chips and coconut oil in a microwave-safe bowl and heat in short intervals, stirring until fully melted and smooth.
- Pour the melted chocolate over the layered dates and spread evenly to cover the entire surface.
- Sprinkle sea salt over the top.
- Refrigerate for about 1 hour, or until fully set.
- Lift from the tray and break or cut into bars or pieces before serving.
Notes
- Use soft, fresh Medjool dates for the best chewy texture.
- If the peanut butter is too thick, warm it slightly to make spreading easier.
- For clean cuts, let the bars sit at room temperature for a few minutes before slicing.
