- 4 dried guajillo peppers, seeds removed
- 6 garlic cloves, finely minced

- 1 tbsp lime juice
- 1 tsp smoked paprika
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp honey
- 60 ml warm water for softening peppers
Instructions
- Place the dried guajillo peppers in a bowl and cover them with warm water. Let them soften for about 10 minutes, then blend them with the soaking water into a smooth paste.
- Season the shrimp with sea salt, black pepper, and smoked paprika, tossing gently to coat evenly.
- Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 to 2 minutes until fragrant and lightly golden.
- Stir in the guajillo paste and cook for about 2 minutes to deepen the flavor.
- Add the seasoned shrimp and cook for 2 to 3 minutes per side until pink and tender. Drizzle in the honey and lime juice, allowing the sauce to bubble and thicken slightly.
- Toss gently to coat the shrimp fully in the guajillo sauce, then remove from heat and serve immediately.
