Description

Garlic Guajillo Shrimp is a bold, aromatic, and flavor-packed dish made with juicy shrimp simmered in a smoky guajillo and garlic sauce. Inspired by vibrant Mexican coastal cooking, this recipe brings together spice, warmth, and freshness for a colorful meal that cooks in minutes.


Ingredients

  • 500 g large shrimp, peeled and deveined
  • 4 dried guajillo peppers, seeds removed
  • 6 garlic cloves, finely minced
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp honey
  • 60 ml warm water for softening peppers

Instructions

  1. Place the dried guajillo peppers in a bowl and cover them with warm water. Let them soften for about 10 minutes, then blend them with the soaking water into a smooth paste.
  2. Season the shrimp with sea salt, black pepper, and smoked paprika, tossing gently to coat evenly.
  3. Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 to 2 minutes until fragrant and lightly golden.
  4. Stir in the guajillo paste and cook for about 2 minutes to deepen the flavor.
  5. Add the seasoned shrimp and cook for 2 to 3 minutes per side until pink and tender. Drizzle in the honey and lime juice, allowing the sauce to bubble and thicken slightly.
  6. Toss gently to coat the shrimp fully in the guajillo sauce, then remove from heat and serve immediately.

Notes

  • Pat shrimp dry before seasoning to help them sear properly.
  • Do not overcook the shrimp to avoid a rubbery texture.
