Ingredients
- Farfalle pasta: 340 g
- Unsalted butter: 2 tablespoons
- Olive oil: 1 tablespoon
- Garlic cloves, minced: 6 cloves
- Heavy cream: 360 ml
- Cream cheese: 85 g
- Fresh spinach, chopped: 60 g
- Grated Parmesan cheese: 60 g
- Salt: 1 teaspoon
- Black pepper: 0.5 teaspoon
- Italian seasoning: 1 teaspoon
- Pasta cooking water: 120 ml
Instructions
- Bring a large pot of salted water to a boil and cook the farfalle pasta until al dente. Reserve 120 ml of pasta water, then drain the pasta.
- Heat the butter and olive oil in a wide skillet over medium heat until melted.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Lower the heat slightly, pour in the heavy cream, and add the cream cheese. Stir until fully melted and smooth.
- Season the sauce with salt, black pepper, and Italian seasoning.
- Fold in the chopped spinach and cook until just wilted.
- Stir in the grated Parmesan cheese until the sauce is silky.
- Add the cooked pasta to the skillet and toss gently to coat.
- Add reserved pasta water gradually until the sauce reaches the desired consistency.
- Taste, adjust seasoning if needed, and serve immediately.
