Description

Ingredients

  • Farfalle pasta: 340 g
  • Unsalted butter: 2 tablespoons
  • Olive oil: 1 tablespoon
  • Garlic cloves, minced: 6 cloves
  • Heavy cream: 360 ml
  • Cream cheese: 85 g
  • Fresh spinach, chopped: 60 g
  • Grated Parmesan cheese: 60 g
  • Salt: 1 teaspoon
  • Black pepper: 0.5 teaspoon
  • Italian seasoning: 1 teaspoon
  • Pasta cooking water: 120 ml

Instructions

  1. Bring a large pot of salted water to a boil and cook the farfalle pasta until al dente. Reserve 120 ml of pasta water, then drain the pasta.
  2. Heat the butter and olive oil in a wide skillet over medium heat until melted.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Lower the heat slightly, pour in the heavy cream, and add the cream cheese. Stir until fully melted and smooth.
  5. Season the sauce with salt, black pepper, and Italian seasoning.
  6. Fold in the chopped spinach and cook until just wilted.
  7. Stir in the grated Parmesan cheese until the sauce is silky.
  8. Add the cooked pasta to the skillet and toss gently to coat.
  9. Add reserved pasta water gradually until the sauce reaches the desired consistency.
  10. Taste, adjust seasoning if needed, and serve immediately.
