Instructions
- In a small saucepan, combine balsamic vinegar, honey, and Dijon mustard. Simmer until reduced by half and thickened into a syrupy glaze.
- Pat chicken breasts dry. Drizzle with olive oil and season with salt, black pepper, garlic powder, oregano, and paprika.
- Heat a grill or grill pan over medium high heat. Cook the chicken for 6 to 7 minutes per side or until the internal temperature reaches 165°F.
- Place the grilled chicken on a serving platter. Top with sliced strawberries, crumbled feta, basil, and mint. Drizzle generously with the balsamic glaze before serving.
