- 3 medium zucchini (about 750 g), sliced lengthwise into 1 cm thick pieces
- 2 tablespoons (30 ml) olive oil
- 1/2 teaspoon (3 g) salt
- 1/4 teaspoon (1 g) black pepper
- 80 g feta cheese, crumbled
- 15 g fresh basil leaves, torn
- 1 tablespoon (15 ml) fresh lemon juice
Instructions
- Place the zucchini slices in a large bowl, drizzle with olive oil, add salt and black pepper, and toss until evenly coated.
- Preheat a grill pan or outdoor grill over medium-high heat.
- Arrange the zucchini slices in a single layer and grill for 3 to 4 minutes per side until tender and marked with golden grill lines.
- Transfer the grilled zucchini to a serving platter and let them rest for about 1 minute.
- Sprinkle the crumbled feta evenly over the warm zucchini.
- Drizzle with lemon juice and scatter the torn basil leaves on top just before serving.
Notes
- For best flavor, add the feta while the zucchini is still warm so it softens slightly.
- Do not overcrowd the grill, cook in batches if needed.
- This dish can be served warm, at room temperature, or chilled.
