Description

A fresh and flavorful dish featuring tender grilled zucchini topped with creamy feta cheese, fragrant basil, and a bright splash of lemon, perfect as a light side or simple main.


Ingredients

  • 3 medium zucchini (about 750 g), sliced lengthwise into 1 cm thick pieces
  • 2 tablespoons (30 ml) olive oil
  • 1/2 teaspoon (3 g) salt
  • 1/4 teaspoon (1 g) black pepper
  • 80 g feta cheese, crumbled
  • 15 g fresh basil leaves, torn
  • 1 tablespoon (15 ml) fresh lemon juice

Instructions

  1. Place the zucchini slices in a large bowl, drizzle with olive oil, add salt and black pepper, and toss until evenly coated.
  2. Preheat a grill pan or outdoor grill over medium-high heat.
  3. Arrange the zucchini slices in a single layer and grill for 3 to 4 minutes per side until tender and marked with golden grill lines.
  4. Transfer the grilled zucchini to a serving platter and let them rest for about 1 minute.
  5. Sprinkle the crumbled feta evenly over the warm zucchini.
  6. Drizzle with lemon juice and scatter the torn basil leaves on top just before serving.

Notes

  • For best flavor, add the feta while the zucchini is still warm so it softens slightly.
  • Do not overcrowd the grill, cook in batches if needed.
  • This dish can be served warm, at room temperature, or chilled.
