- 600 g chicken tenders or sliced chicken breast
- 200 g all purpose flour
- 80 g cornstarch
- 2 large eggs
- 120 ml milk
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp ground black pepper
- 1 tsp chilli flakes
- 1 tsp cayenne pepper
- 1 tbsp hot sauce
- 250 ml vegetable oil
- 160 ml honey
- 1 tbsp chilli flakes (for hot honey)
- 1 tsp butter
Instructions
- Pat the chicken tenders dry and season them with salt, garlic powder, onion powder, smoked paprika, black pepper, chilli flakes, and cayenne pepper.
- Prepare the dredging bowls. In one bowl, whisk eggs, milk, and hot sauce. In another bowl, mix flour and cornstarch.
- Coat each chicken piece by dipping it into the flour mixture, then the egg mixture, then back into the flour mixture to create a double coating.
- Heat vegetable oil in a deep pot or pan over medium high heat. Fry the chicken tenders in batches for 5 to 6 minutes until golden and crispy.
- Transfer the fried tenders onto a wire rack to maintain crispiness.
- In a small saucepan, warm the honey with chilli flakes and butter until smooth and glossy.
- Drizzle the hot honey generously over the fried tenders before serving.
Notes
- Pat chicken dry to help the coating stick better.
- Maintain oil temperature around 175 C for perfect crisping.
- Let fried chicken rest on a wire rack to prevent sogginess.
