Ingredients
- Chicken breast, 600 g, boneless and skinless
- White beans, 400 g cooked and drained (about 2 cups)
- Onion, 1 large (about 150 g), finely chopped
- Garlic cloves, 4 cloves (about 12 g), minced
- Olive oil, 2 tablespoons (30 ml)
- Chicken broth, 1 liter (4 cups)
- Green chili peppers, 120 g, chopped
- Ground cumin, 2 teaspoons (4 g)
- Ground coriander, 1 teaspoon (2 g)
- Sweet paprika, 1 teaspoon (2 g)
- Salt, 1.5 teaspoons (9 g)
- Black pepper, 0.5 teaspoon (1 g)
- Cream cheese, 150 g, softened
- Fresh lime juice, 2 tablespoons (30 ml)
- Fresh cilantro, 20 g, finely chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and cook for 4 to 5 minutes until soft and lightly golden. Stir in the garlic and cook for about 30 seconds until fragrant.
- Add the chicken breast to the pot along with cumin, coriander, paprika, salt, and black pepper. Pour in the chicken broth and add the green chili peppers. Bring to a gentle simmer, cover, and cook for 18 to 20 minutes until the chicken is fully cooked.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and add the white beans. Simmer uncovered for 10 minutes, stirring occasionally.
- Reduce the heat to low and stir in the softened cream cheese until fully melted and smooth. Add lime juice and chopped cilantro, taste, and adjust seasoning if needed. Serve warm.

- Let the chili rest for 5 minutes before serving to allow the flavors to fully develop.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- The chili can be frozen for up to 2 months and reheated gently on the stove.
