Ingredients
- Heavy cream: 2 cups
- Granulated sugar: 1/2 cup

- Extra granulated sugar: 4 teaspoons
Instructions
- Pour the heavy cream into a medium saucepan, add the granulated sugar and salt, then heat over medium heat while stirring until the sugar fully dissolves and the cream is hot but not boiling.
- Remove the saucepan from the heat and whisk in the lemon juice, lemon zest, and vanilla extract until fully combined and smooth.

- Pour the mixture evenly into heatproof ramekins and refrigerate for at least 4 hours until softly set.
