Description

A fresh, vibrant salad made with delicate carrot ribbons tossed in a bright lemon-honey dressing, finished with herbs and crunchy toasted almonds.


Ingredients

Instructions

  1. Use a vegetable peeler to shave the carrots into long, thin ribbons and place them in a large mixing bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, grated garlic, salt, and black pepper until well combined.
  3. Pour the dressing over the carrot ribbons.
  4. Gently toss the carrots until evenly coated, being careful not to break the ribbons.
