- 4 large carrots, peeled and shaved into ribbons
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice

- 1 small garlic clove, finely grated

- 2 tablespoons fresh parsley, finely chopped

Instructions
- Use a vegetable peeler to shave the carrots into long, thin ribbons and place them in a large mixing bowl.
- In a small bowl, whisk together the olive oil, lemon juice, honey, grated garlic, salt, and black pepper until well combined.
- Pour the dressing over the carrot ribbons.
- Gently toss the carrots until evenly coated, being careful not to break the ribbons.
- Sprinkle the chopped parsley and toasted almonds over the salad and give a final gentle toss before serving.
Notes
- Toss the salad just before serving to keep the carrots crisp.
