Ingredients
- Potatoes (Yukon Gold or Russet), 1.5 kg, peeled and cut into chunks
- Garlic bulbs, 2 whole (about 120 g)
- Olive oil, 30 ml
- Unsalted butter, 60 g
- Whole milk, 240 ml, warmed
- Heavy cream, 120 ml
- Salt, 8 g, or to taste
- Ground black pepper, 3 g
- Fresh chives or parsley, 10 g, finely chopped
Instructions
- Preheat the oven to 200°C. Slice the tops off the garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 35 to 40 minutes until soft and golden.
- Squeeze the roasted garlic cloves into a bowl and mash into a smooth paste.
- Place the potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Simmer for 18 to 22 minutes until fork-tender.
- Drain the potatoes well and return them to the hot pot over low heat for 1 to 2 minutes to remove excess moisture.
- Add butter to the potatoes and mash until melted. Stir in roasted garlic, warm milk, and cream gradually until smooth and creamy.
- Season with salt and black pepper, adjust to taste, and transfer to a serving bowl.
- Garnish with chopped chives or parsley and serve warm.
