Description

Ingredients

  • All-purpose flour: 2 1/2 cups
  • Baking powder: 2 1/2 teaspoons

  • Unsalted butter: 1 cup, softened
  • Granulated sugar: 1 3/4 cups
  • Large eggs: 4, at room temperature
  • Vanilla extract: 2 teaspoons
  • Whole milk: 1 cup
  • Heavy cream: 2 cups, cold
  • Powdered sugar: 1 cup
  • Fresh strawberries: 2 pounds
  • Shredded coconut: 1/2 cup

Instructions

  1. Preheat the oven to 350°F and grease two 8-inch round cake pans, lining the bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a large bowl, beat the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. Alternate adding the dry ingredients and the milk to the batter, mixing gently until just combined.
  6. Divide the batter evenly between the prepared pans and bake for about 35 minutes, or until a toothpick inserted in the center comes out clean.
