Description
Soft and chewy lemon sugar cookies with crisp edges and a bright citrus flavor, perfect for an easy homemade treat that feels comforting and fresh.
Ingredients
- All-purpose flour: 2 1/4 cups
- Granulated sugar: 1 cup
- Unsalted butter (softened): 3/4 cup
- Large eggs: 2
- Fresh lemon juice: 1/4 cup
- Lemon zest: 2 tablespoons
- Baking soda: 1 teaspoon
- Salt: 1/2 teaspoon
- Vanilla extract: 1 teaspoon
Instructions
- Cream the softened butter and granulated sugar in a large bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the lemon juice, lemon zest, and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.
- If the dough feels too soft, chill it for about 15 minutes to make shaping easier.
- Scoop tablespoon-sized portions of dough, roll into balls, and place on parchment-lined baking sheets with space between.
- Bake in a preheated oven at 350°F (175°C) for 10 to 12 minutes, until the edges are set and the centers are slightly soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For best flavor, always use freshly squeezed lemon juice and zest.
- Do not overbake, cookies will continue to firm up as they cool.
- If your kitchen is warm, chilling the dough briefly helps prevent spreading.
- Store cookies in an airtight container to maintain softness.
