- 1 cup freshly brewed coffee

- 250g mascarpone cheese
- 30g caster sugar
- 350g cold heavy cream
- 150g chocolate (dark or milk)
- 50g coconut oil
Instructions
- Stick two sponge biscuits together using your chosen spread. Briefly dip in coffee and place on a tray. Freeze for 1 hour until firm.
- Whisk mascarpone to loosen it. Add heavy cream and sugar, then whip until thick and smooth.
- Remove frozen biscuits and coat each with mascarpone cream, shaping into an oval coffee bean. Freeze again until set.
- Melt chocolate and coconut oil together until smooth and glossy.
- Dip each frozen mousse bean into the chocolate coating. Place on the tray to set.
- Use a knife to create a center indentation, mimicking a coffee bean look.

- Whip the cream until soft peaks form to avoid overmixing.
- Work quickly when coating to prevent the mousse from melting.
