Description

A hearty and comforting plant-based bowl inspired by classic shakshuka, made with spiced tomato sauce and golden tofu for a nourishing, flavor-packed meal any time of day.


Ingredients

  • Extra-firm tofu: 400 grams, pressed and cubed
  • Olive oil: 2 tablespoons
  • Yellow onion: 1 medium, finely chopped
  • Garlic cloves: 3 cloves, minced
  • Red bell pepper: 1 large, diced
  • Canned crushed tomatoes: 400 grams
  • Tomato paste: 2 tablespoons
  • Ground cumin: 1 teaspoon
  • Ground paprika: 1 teaspoon
  • Ground coriander: 0.5 teaspoon
  • Red chili flakes: 0.5 teaspoon
  • Salt: 1 teaspoon
  • Black pepper: 0.5 teaspoon
  • Water: 120 milliliters
  • Fresh parsley: 2 tablespoons, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium heat and add the cubed tofu, cooking until lightly golden on all sides, about 6 to 8 minutes, then remove and set aside.
  2. In the same skillet, add the chopped onion and cook for 4 to 5 minutes until soft and translucent.
  3. Add the minced garlic and diced red bell pepper, cooking for about 2 minutes until fragrant.
  4. Stir in the cumin, paprika, coriander, chili flakes, salt, and black pepper, and cook for about 30 seconds to bloom the spices.
  5. Add the tomato paste and crushed tomatoes, stirring until well combined.
  6. Pour in the water, mix well, and let the sauce simmer uncovered for 10 to 12 minutes until thickened.
  7. Return the tofu to the skillet, gently nestling it into the sauce, and simmer for another 5 minutes so it absorbs the flavors.
  8. Remove from heat and sprinkle with chopped fresh parsley before serving.

Notes

  • Press the tofu well before cooking to improve browning and texture.
  • Adjust the chili flakes to control the level of heat.
  • The sauce tastes even better the next day as the flavors deepen.
  • Serve with warm flatbread, rice, or quinoa for a complete meal.
