Description

Ingredients

  • Zucchini: 3 medium zucchini, sliced lengthwise into thin strips
  • Ricotta Cheese: 1 1/2 cups full-fat ricotta cheese
  • Shredded Mozzarella Cheese: 1 cup shredded mozzarella
  • Grated Parmesan Cheese: 1/2 cup finely grated Parmesan
  • Garlic: 2 cloves, minced
  • Olive Oil: 1 tablespoon olive oil
  • Fresh Parsley: 2 tablespoons finely chopped parsley, plus extra for garnish
  • Salt: 1/2 teaspoon salt
  • Black Pepper: 1/4 teaspoon black pepper
  • Creamy White Sauce: 1 cup prepared white sauce

Instructions

  1. Slice the zucchini lengthwise into thin strips. Brush lightly with olive oil and season with a pinch of salt.
  2. Place the zucchini strips on a baking sheet and bake at 400°F (200°C) for 8 to 10 minutes until tender and flexible. Let cool slightly.
  3. In a mixing bowl, combine ricotta cheese, shredded mozzarella, Parmesan, minced garlic, chopped parsley, salt, and black pepper until smooth.
  4. Spoon a generous amount of the ricotta mixture onto each zucchini strip and gently roll it up.
  5. Spread the creamy white sauce evenly over the bottom of a baking dish.
  6. Arrange the zucchini roll ups seam-side down in the baking dish.
  7. Bake at 375°F (190°C) for 25 to 30 minutes until bubbly and lightly golden.
  8. Let rest for 5 minutes, garnish with extra parsley, and serve warm.
