Description

Juicy chicken skewers coated in a rich garlic parmesan sauce, served over fluffy rice for a quick and comforting meal.


Ingredients

  • 1 pound chicken pieces, cut into bite sized chunks
  • 2 cups cooked white rice
  • 1/2 cup grated parmesan cheese
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat.
  2. In a bowl, toss the chicken pieces with salt, pepper, and olive oil until evenly coated.
  3. Thread the chicken onto skewers.
  4. Add olive oil to the skillet and place the skewers in the pan.
  5. Cook for 8 to 10 minutes, turning occasionally until golden and fully cooked.
  6. Remove the skewers and in the same pan melt butter.
  7. Add minced garlic and cook briefly until fragrant.
  8. Stir in parmesan cheese and parsley until a smooth sauce forms.
  9. Return the chicken to the pan and coat well in the sauce.
  10. Serve over warm rice and enjoy.
