- 1 pound chicken pieces, cut into bite sized chunks
- 2 cups cooked white rice
- 1/2 cup grated parmesan cheese
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat.
- In a bowl, toss the chicken pieces with salt, pepper, and olive oil until evenly coated.
- Thread the chicken onto skewers.
- Add olive oil to the skillet and place the skewers in the pan.
- Cook for 8 to 10 minutes, turning occasionally until golden and fully cooked.
- Remove the skewers and in the same pan melt butter.
- Add minced garlic and cook briefly until fragrant.
- Stir in parmesan cheese and parsley until a smooth sauce forms.
- Return the chicken to the pan and coat well in the sauce.
- Serve over warm rice and enjoy.
