Ingredients
- Ripe bananas, 2 medium (about 240 g), mashed
- Rolled oats, 120 g (1 1/4 cups)
- Dark chocolate chips or chunks, 80 g (1/2 cup)
- Natural peanut butter or almond butter, 60 g (1/4 cup)
- Vanilla extract, 5 ml (1 teaspoon)
Instructions
- Preheat the oven to 180°C and line a baking tray with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth and creamy.
- Add the peanut butter and vanilla extract, then mix until fully combined.
- Fold in the rolled oats until evenly coated and a thick dough forms.
- Gently mix in the dark chocolate chips or chunks.
- Scoop equal portions of dough onto the prepared baking tray and lightly flatten each cookie.
- Bake for 12 to 15 minutes, until the edges are set and lightly golden while the centers remain soft.
- Remove from the oven and allow the cookies to cool slightly before serving.
