Description
A quick and indulgent no-bake dessert made with naturally sweet dates, rich dark chocolate, and crispy puffed grains. These bars are chewy, crunchy, and glossy, perfect for a fast snack or healthy chocolate treat.
Ingredients
- Medjool dates, pitted, 200 g (about 1 packed cup)
- Dark chocolate (70 percent cocoa), 150 g (about 1 cup chopped)
- Coconut oil, 15 g (1 tablespoon)
- Puffed rice or puffed quinoa, 60 g (about 2 cups)
- Unsweetened shredded coconut, 30 g (about 1/3 cup)
- Natural peanut butter or almond butter, 60 g (about 1/4 cup)
- Vanilla powder or vanilla extract, 2 g (1 teaspoon)
- Fine sea salt, 1 g (a small pinch)
Instructions
- Chop the Medjool dates into small pieces and place them in a mixing bowl. Press them with the back of a spoon until sticky and slightly clumped.
- Add the chopped dark chocolate and coconut oil to a heatproof bowl. Melt gently until smooth and glossy, stirring well.
- To the dates, add puffed rice, shredded coconut, nut butter, vanilla, and salt. Pour in about two thirds of the melted chocolate and mix until evenly coated.
- Press the mixture firmly into a parchment-lined rectangular pan, drizzle with the remaining chocolate, smooth the top, and refrigerate for 20 minutes. Slice into bars and serve.
Notes
- Use soft Medjool dates for the best binding and texture.
- Let the bars sit at room temperature for 5 minutes before slicing for clean cuts.
- Store in an airtight container in the refrigerator to keep them fresh and chewy.
