Description

Crispy, pull-apart sweet potato planks sliced into an intricate accordion pattern, brushed with an aromatic garlic herb oil, and roasted to golden perfection.


Ingredients

  • 4 medium sweet potatoes
  • 60 ml avocado oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tsp fresh rosemary, finely minced
  • 2 tsp fresh thyme, finely minced
  • 2 garlic cloves, finely grated
  • 160 g vegan mayo
  • 2 tsp sriracha
  • 1 tsp maple syrup
  • 2 tsp lime juice
  • 2 tbsp fresh chives, finely chopped

Instructions

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. In a small bowl, mix together avocado oil, salt, pepper, paprika, rosemary, thyme, and grated garlic.
  3. Peel sweet potatoes and trim opposite sides so they lay flat, then cut lengthwise into 1 cm thick planks.
  4. Place each plank between two chopsticks and slice straight across close together, then flip and cut diagonally at a 45-degree angle to create a crisscross pattern.
  5. Soak planks in cold water for 30 minutes, pat completely dry with a towel, and arrange on the baking sheet.
  6. Brush both sides generously with the garlic herb oil, making sure it enters all the cuts.
  7. Bake for 15 minutes, flip, and bake for an additional 15 minutes until edges are deeply caramelized and crispy.
  8. While baking, whisk together the vegan mayo, sriracha, maple syrup, and lime juice in a small bowl until smooth.
  9. Garnish hot sweet potatoes with chopped chives and serve immediately alongside the creamy sauce.

  • Note: Ensure the sweet potato planks are completely dry after soaking so they roast instead of steam.
