- 1 lb salmon fillets, cut into bite sized cubes
- 1 cup panko breadcrumbs
- 1/2 cup all purpose flour
- 2 large eggs, beaten
- 2 tablespoons olive oil
- 2 tablespoons chipotle peppers in adobo sauce, finely chopped
- 1/2 cup Greek yogurt
- 1 whole lime, juiced
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons green onions, chopped
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the air fryer to 400°F.
- In one bowl mix flour with salt, pepper, and paprika. In another bowl beat the eggs. In a third bowl add panko breadcrumbs.
- Lightly spray the air fryer basket with olive oil.
- Coat each salmon piece in the flour mixture, dip into the egg, then coat with panko breadcrumbs. Place in a single layer in the basket.
- Air fry for 8 to 10 minutes, flipping halfway through, until golden and crispy.
- In a bowl mix Greek yogurt, chipotle peppers, lime juice, garlic, and a pinch of salt to make the sauce.
- Drizzle the sauce over the salmon bites and garnish with green onions and parsley before serving.
Notes
- Do not overcrowd the air fryer basket for even crisping.
- Pat the salmon dry before coating to help the crust stick.
- Adjust chipotle amount to control spice level.
- Reheat leftovers in the air fryer to maintain crisp texture.
