Description
A creamy and comforting bowl of small ring pasta tossed in a rich homemade Alfredo sauce made with butter, garlic, cream, milk, and freshly grated parmesan. This nostalgic twist on a classic delivers silky texture and bold cheesy flavor in every bite.
Ingredients
Scale
- 12 ounces small ring pasta
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup whole milk
- 1 cup freshly grated parmesan cheese
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon fresh parsley, finely chopped
Instructions
- Bring a large pot of salted water to a rolling boil over high heat.
- Cook the small ring pasta according to package instructions until al dente, about 8 to 10 minutes. Reserve 1/4 cup of pasta water, then drain.
- In a medium saucepan over medium heat, melt the butter.
- Add the minced garlic and cook for about 30 seconds until fragrant, stirring constantly.
- Pour in the heavy cream and whole milk. Stir and let simmer on low heat for 3 to 4 minutes until slightly thickened.
- Add the freshly grated parmesan cheese gradually, stirring continuously until fully melted and smooth.
- Season with salt and freshly ground black pepper to taste.
- Add the drained pasta to the sauce and toss gently to coat. Use a splash of reserved pasta water if needed to loosen the sauce.
- Sprinkle with finely chopped fresh parsley and serve warm.
Notes
- Use freshly grated parmesan for the smoothest texture and best flavor.
- Keep the heat low when adding cheese to prevent the sauce from separating.
- If the sauce becomes too thick, stir in a tablespoon of warm milk or reserved pasta water.
- Leftovers can be reheated gently with a splash of milk to restore creaminess.
