Apple & Brie Stuffed Chicken is a cozy, elegant dish that wraps creamy brie and crisp apples inside juicy chicken breasts, brushed with Dijon and thyme for a flavorful finish.

- 4 boneless, skinless chicken breasts
- 1 apple (Honeycrisp or Granny Smith), thinly sliced
- 120 g (4 oz) brie cheese, sliced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh thyme or ½ teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 190°C (375°F).
- Place each chicken breast on a cutting board and carefully slice a pocket horizontally. Season both sides with salt and pepper.
- Insert slices of brie and apple into each pocket. Secure with toothpicks or kitchen twine.
- Heat olive oil and butter in an oven-safe skillet over medium heat. Sear the chicken for 3–4 minutes per side until golden.
- Brush chicken with Dijon mustard and sprinkle thyme over the top.
- Transfer the skillet to the oven and bake for 15–18 minutes, or until the chicken reaches 74°C (165°F).
- Let rest for 5 minutes, then slice diagonally to serve.
Notes
- Use firm apples like Granny Smith for the best texture.
- Do not overfill the chicken pockets to prevent leaking.
- Let the chicken rest after baking for juicier results.
