Description

Apple & Brie Stuffed Chicken is a cozy, elegant dish that wraps creamy brie and crisp apples inside juicy chicken breasts, brushed with Dijon and thyme for a flavorful finish.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 apple (Honeycrisp or Granny Smith), thinly sliced
  • 120 g (4 oz) brie cheese, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Place each chicken breast on a cutting board and carefully slice a pocket horizontally. Season both sides with salt and pepper.
  3. Insert slices of brie and apple into each pocket. Secure with toothpicks or kitchen twine.
  4. Heat olive oil and butter in an oven-safe skillet over medium heat. Sear the chicken for 3–4 minutes per side until golden.
  5. Brush chicken with Dijon mustard and sprinkle thyme over the top.
  6. Transfer the skillet to the oven and bake for 15–18 minutes, or until the chicken reaches 74°C (165°F).
  7. Let rest for 5 minutes, then slice diagonally to serve.

Notes

  • Use firm apples like Granny Smith for the best texture.
  • Do not overfill the chicken pockets to prevent leaking.
  • Let the chicken rest after baking for juicier results.
