- 120 g brie cheese, sliced
- 1 medium apple (about 180 g), thinly sliced
- 2 tablespoons olive oil
- 2 garlic cloves, finely minced
- 1 teaspoon fresh thyme, finely chopped
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Carefully slice a pocket into each chicken breast without cutting all the way through.
- Season the inside and outside of the chicken with salt, black pepper, and paprika.
- Fill each pocket evenly with apple slices and brie cheese.
- Sprinkle minced garlic and fresh thyme inside each stuffed chicken breast.
- Secure the openings with toothpicks to keep the filling in place.
- Heat olive oil in an oven safe skillet over medium heat and lightly sear the chicken for about 3 minutes per side until golden.
- Transfer the skillet to a preheated oven at 190 C and bake for 15 to 18 minutes until the chicken is cooked through.
- Remove from the oven, let rest for 5 minutes, remove toothpicks, and serve.
