Description

Soft and buttery apple brioche buns topped with thinly sliced apples, toasted almonds, and a delicate powdered sugar finish. These bakery-style pastries are fluffy, lightly sweet, and perfect for breakfast, brunch, or dessert.

  • 4 cups all-purpose flour
  • 1 cup warm whole milk
  • 2 1/4 teaspoons active dry yeast
  • 1/3 cup granulated sugar
  • 1 teaspoon salt
  • 2 large eggs
  • 1 large egg for egg wash
  • 1/2 cup unsalted butter, softened
  • 2 medium red apples, thinly sliced
  • 1/3 cup sliced almonds
  • 2 tablespoons apricot jam
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine warm milk, active dry yeast, and granulated sugar. Let sit for 5 minutes until foamy.
  3. Add flour, salt, eggs, and softened butter. Knead until a smooth and elastic dough forms.
  4. Place the dough in a lightly greased bowl, cover, and let rise for 1 1/2 hours until doubled in size.
  5. Divide the dough into 8 equal portions and shape into round buns.
  6. Place the buns on the prepared baking sheet and gently press the center of each bun.
  7. Arrange thin apple slices in the center of each bun and sprinkle sliced almonds around the edges.
  8. Brush the buns with egg wash.
  9. Bake for 20 to 25 minutes until golden brown and puffed.
  10. Warm the apricot jam slightly and brush over the apples for shine.
  11. Dust lightly with powdered sugar before serving.
