- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 2 medium apples, peeled and finely diced
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl combine flour, granulated sugar, and salt. Add cold cubed butter and mix until crumbly. Add the egg and mix until a dough forms.
- Lightly flour a work surface and roll the dough to about 1/8 inch thickness.
- In another bowl mix diced apples, brown sugar, cinnamon, lemon juice, and vanilla extract.
- Cut dough into small circles. Place a spoonful of apple filling in the center of half of the circles.
- Cut thin strips of dough and arrange them in a lattice pattern over the filling.
- Transfer cookies to the prepared baking sheet.
- Bake for about 18 minutes until the pastry becomes golden and crisp.
- Allow cookies to cool slightly before serving so the filling can set.
