Description

A creamy, vibrant green avocado mayo made with ripe avocado, olive oil, lemon juice, and garlic. Smooth, fresh, and ready in just minutes, this plant-based spread is perfect for sandwiches, wraps, bowls, and dipping.


Ingredients

  • 1 large ripe avocado, peeled and pitted
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, minced
  • 1/4 teaspoon salt, or to taste
  • 1 to 2 tablespoons water, as needed

Instructions

  1. Add the avocado, olive oil, lemon juice, minced garlic, salt, and 1 tablespoon of water into a blender or food processor.
  2. Secure the lid and blend on high speed for about 30 seconds.
  3. Stop and scrape down the sides with a spatula to ensure everything blends evenly.
  4. Continue blending for another 15 to 30 seconds until completely smooth and creamy.
  5. Check the consistency and add the remaining tablespoon of water if needed, then blend briefly again.
  6. Taste and adjust salt if necessary.
  7. Transfer to a bowl and serve immediately or refrigerate in an airtight container.

Notes

  • Use a perfectly ripe avocado for the smoothest texture.
  • Press plastic wrap directly against the surface before refrigerating to reduce browning.
  • For a tangier flavor, add a little extra lemon juice.
