Description
Creamy avocado tuna salad rolled into soft tortillas and sliced into bite-sized pinwheels, perfect for a quick lunch or a light appetizer.
Ingredients
Scale
- 1 cup canned tuna, drained well
- 2 ripe avocados, mashed
- 4 medium flour tortillas
- 1/4 cup finely chopped red onion
- 2 tablespoons chopped fresh parsley or cilantro
- 3 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a mixing bowl, mash the avocados until smooth but slightly chunky.
- Add the drained tuna, chopped red onion, fresh herbs, mayonnaise, lemon juice, salt, and black pepper. Mix until well combined.
- Lay the flour tortillas flat on a clean surface.
- Spread the tuna avocado mixture evenly over each tortilla, leaving a small border around the edges.
- Roll each tortilla tightly into a log shape.
- Chill the rolled tortillas for easier slicing, if desired.
- Slice into 1 inch pinwheels using a sharp knife, wiping the blade between cuts.
- Serve immediately or refrigerate until ready to serve.
Notes
- Use ripe but firm avocados for the best texture.
- Drain the tuna thoroughly to avoid a watery filling.
- Chilling before slicing helps create cleaner pinwheels.
- Do not overfill the tortillas to keep them easy to roll.
