- 10 small flour tortillas
- 2 cups cooked shredded chicken
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup enchilada sauce
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- In a bowl, mix shredded chicken, enchilada sauce, sour cream, olive oil, garlic powder, paprika, salt, and black pepper until well combined.
- Lightly grease a baking dish.
- Fill each tortilla with the chicken mixture and arrange them tightly in the baking dish.
- Sprinkle cheddar and mozzarella cheese evenly over the tacos.
- Bake for 20 minutes until cheese is melted and bubbly.
- Remove from oven and top with chopped green onions.
- Let cool slightly, then serve and enjoy.
Notes
- Warm tortillas slightly before filling to prevent cracking
- Use freshly shredded cheese for best melting
- Do not overfill tacos to keep them intact
- Let tacos rest a few minutes before serving
