- 1 pound raw shrimp, peeled and deveined
- 1 can (14.5 oz) diced tomatoes
- 3/4 cup crumbled feta cheese
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F.
- In an oven-safe skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Stir in diced tomatoes, red pepper flakes, oregano, salt, and black pepper. Simmer for 8–10 minutes until slightly thickened.
- Add shrimp in an even layer, pressing them gently into the sauce.
- Transfer the skillet to the oven and bake for 8–10 minutes, until shrimp are pink and cooked through.
- Remove from the oven and sprinkle with crumbled feta.
- Let rest for 2 minutes, then garnish with fresh parsley and serve hot.
