  • 1 can (14.5 oz) diced tomatoes
  • 3/4 cup crumbled feta cheese
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. In an oven-safe skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in diced tomatoes, red pepper flakes, oregano, salt, and black pepper. Simmer for 8–10 minutes until slightly thickened.
  4. Add shrimp in an even layer, pressing them gently into the sauce.
  5. Transfer the skillet to the oven and bake for 8–10 minutes, until shrimp are pink and cooked through.
  6. Remove from the oven and sprinkle with crumbled feta.
