- 12 ounces penne pasta
- 2 skinless salmon fillets (approx. 10 oz total)
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup freshly grated parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- Zest from 1 lemon
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
- Cook pasta in salted boiling water for 2 minutes less than package directions. Drain and set aside.
- Place salmon fillets on a baking tray, drizzle with olive oil, and season with salt and pepper. Bake until just cooked through, about 12–15 minutes. Flake into chunks.
- In a large mixing bowl, combine heavy cream, minced garlic, half the parmesan, parsley, lemon zest, and salt and pepper.
- Add the cooked pasta and flaked salmon into the bowl. Toss gently to coat everything well.
- Pour the mixture into the prepared baking dish. Sprinkle remaining parmesan on top.
- Bake uncovered for 20 minutes, or until golden and bubbling.
- Let rest for 5 minutes. Garnish with extra parsley and lemon zest before serving.
Notes
- Use freshly grated parmesan for best melt and flavor.
- Don’t overcook salmon — it finishes cooking in the oven.
- For a little kick, add a pinch of red pepper flakes to the sauce.
- Store leftovers in an airtight container for up to 3 days.
