Description

A hearty and fresh steak salad packed with chickpeas, crisp vegetables, creamy avocado, and tangy feta, all tossed in a bright lemon dressing.


Ingredients

  • 12 oz steak, cooked to medium-rare
  • 1 cup chickpeas, cooked or canned and drained
  • 1 cup cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1 large avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat a skillet or grill pan over medium-high heat.
  2. In a large bowl, combine chickpeas, cucumbers, cherry tomatoes, red onion, avocado, and feta cheese.
  3. Lightly oil the skillet and season the steak with salt and pepper.
  4. Cook the steak for 4 to 5 minutes per side until desired doneness, then remove and let it rest.
  5. Slice the steak thinly against the grain and add it to the bowl with the vegetables.
  6. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and black pepper, then pour over the salad and toss gently.
  7. Sprinkle fresh parsley on top and serve immediately.

Notes

  • Let the steak rest before slicing to keep it juicy.
  • Add avocado just before serving to prevent browning.
