- 12 oz steak, cooked to medium-rare
- 1 cup chickpeas, cooked or canned and drained
- 1 cup cucumbers, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 1 large avocado, diced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat a skillet or grill pan over medium-high heat.
- In a large bowl, combine chickpeas, cucumbers, cherry tomatoes, red onion, avocado, and feta cheese.
- Lightly oil the skillet and season the steak with salt and pepper.
- Cook the steak for 4 to 5 minutes per side until desired doneness, then remove and let it rest.
- Slice the steak thinly against the grain and add it to the bowl with the vegetables.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and black pepper, then pour over the salad and toss gently.
- Sprinkle fresh parsley on top and serve immediately.
Notes
- Let the steak rest before slicing to keep it juicy.
- Add avocado just before serving to prevent browning.
- Store dressing separately if making ahead.
