Description

Crispy oven baked fries topped with tender shredded BBQ beef, sweet caramelized onions, and melted cheddar cheese. A bold, smoky, and crowd pleasing comfort dish perfect for sharing.


Ingredients

  • 900 grams Russet potatoes, cut into fries
  • 900 grams beef chuck
  • 2 large yellow onions, thinly sliced
  • 2 cups (200 grams) shredded cheddar cheese
  • 1 cup (240 milliliters) barbecue sauce
  • 2 tablespoons (30 milliliters) olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat oven to 220 degrees Celsius (425 degrees Fahrenheit).
  2. Toss the cut potatoes with olive oil, salt, and black pepper until evenly coated.
  3. Spread the fries in a single layer on a large baking sheet.
  4. Roast fries for 30 minutes, flipping halfway, until golden and crisp.
  5. Meanwhile, simmer the beef in a large pot with enough water to cover for about 2 hours until tender. Remove, shred, and mix with barbecue sauce.
  6. In a skillet over medium low heat, cook the sliced onions with a little olive oil for about 20 minutes until caramelized.
  7. Layer the cooked fries with shredded BBQ beef and caramelized onions, then sprinkle evenly with cheddar cheese.
  8. Return to the oven and bake for 8 to 10 minutes until the cheese is fully melted.
  9. Remove from oven, let rest for 2 minutes, then serve immediately.

Notes

  • Do not overcrowd the baking sheet to keep fries crispy.
  • Taste the barbecue sauce before adding extra salt.
  • Beef and onions can be prepared up to 2 days in advance.
