- 900 grams Russet potatoes, cut into fries
- 900 grams beef chuck
- 2 large yellow onions, thinly sliced
- 2 cups (200 grams) shredded cheddar cheese
- 1 cup (240 milliliters) barbecue sauce
- 2 tablespoons (30 milliliters) olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat oven to 220 degrees Celsius (425 degrees Fahrenheit).
- Toss the cut potatoes with olive oil, salt, and black pepper until evenly coated.
- Spread the fries in a single layer on a large baking sheet.
- Roast fries for 30 minutes, flipping halfway, until golden and crisp.
- Meanwhile, simmer the beef in a large pot with enough water to cover for about 2 hours until tender. Remove, shred, and mix with barbecue sauce.
- In a skillet over medium low heat, cook the sliced onions with a little olive oil for about 20 minutes until caramelized.
- Layer the cooked fries with shredded BBQ beef and caramelized onions, then sprinkle evenly with cheddar cheese.
- Return to the oven and bake for 8 to 10 minutes until the cheese is fully melted.
- Remove from oven, let rest for 2 minutes, then serve immediately.
Notes
- Do not overcrowd the baking sheet to keep fries crispy.
- Taste the barbecue sauce before adding extra salt.
- Beef and onions can be prepared up to 2 days in advance.
- Reheat leftovers in the oven to restore crispness.
