Description

  • 1 ½ pounds boneless skinless chicken thighs, cut into cubes
  • ½ cup smoky barbecue sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 5 cups chopped romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1 large cucumber, sliced
  • 1 cup cooked corn kernels
  • ¼ cup thinly sliced red onion
  • 2 tablespoons chopped fresh parsley
  • ½ cup plain Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chopped fresh dill
  • 2 to 3 tablespoons water

Instructions

  1. Preheat a grill or grill pan over medium high heat. If using wooden skewers, soak them in water for 20 minutes.
  2. In a large bowl, combine chicken thighs, barbecue sauce, olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Thread the marinated chicken onto skewers, leaving slight space between each piece.
  4. In a separate large bowl, combine romaine lettuce, cucumber, cherry tomatoes, corn, red onion, and parsley.
  5. Grill the skewers for 10 to 12 minutes, turning occasionally, until fully cooked and lightly charred.
  6. In a small bowl, whisk together Greek yogurt, lime juice, dill, and water until smooth and creamy.
  7. Arrange the salad on serving plates, place the grilled skewers on top, and drizzle with the creamy herb dressing before serving.
