Ingredients
- Beef brisket (1.5 kilograms)
- Yellow onions (2 large, thinly sliced)
- Garlic cloves (4 cloves, minced)
- Beef stock (750 milliliters)
- Tomato paste (2 tablespoons)
- Olive oil (2 tablespoons)
- All-purpose flour (2 tablespoons)
- Salt (2 teaspoons)
- Black pepper (1 teaspoon)
- Smoked paprika (1 teaspoon)
- Dried thyme (1 teaspoon)
- Bay leaves (2 leaves)
Instructions
- Pat the beef brisket dry and season evenly on all sides with salt, black pepper, and smoked paprika.
- Heat olive oil in a large oven-safe pot over medium heat and sear the brisket on all sides until deeply browned, then remove and set aside.
- Add the sliced onions to the same pot and cook for 8 to 10 minutes until soft, golden, and fragrant.
- Stir in the minced garlic and tomato paste and cook for 1 minute until aromatic.
- Sprinkle the flour over the onion mixture and stir well, cooking for 1 minute to remove the raw flour taste.
- Slowly pour in the beef stock while stirring to create a smooth gravy, then add dried thyme and bay leaves.
- Return the brisket to the pot, cover tightly, and transfer to a preheated oven at 160 degrees Celsius.
- Braise for 3 hours, turning the brisket once halfway through cooking.
- Remove from the oven and let the brisket rest for 15 minutes.
- Slice against the grain and serve generously topped with the rich gravy.
