Description

Juicy spiced beef tucked into warm pita bread, topped with zesty sumac onions and a cooling garlic-yogurt sauce. A quick, satisfying Middle Eastern-inspired meal perfect for lunch or dinner.


Ingredients

  • 1 lb beef sirloin or flank steak, thinly sliced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 large red onion, thinly sliced
  • 1 tbsp sumac
  • 2 tbsp lemon juice
  • 1 cup Greek yogurt
  • 1 garlic clove, minced
  • 2 tbsp fresh mint or parsley, chopped
  • 4 pita breads
  • 1 cup lettuce or arugula

Instructions

  1. In a bowl, combine beef slices with cumin, coriander, paprika, garlic powder, salt, pepper, and olive oil. Toss well to coat.
  2. In another bowl, mix red onion with lemon juice and sumac. Let it sit for at least 10 minutes to soften and absorb flavor.
  3. In a third bowl, combine Greek yogurt, minced garlic, chopped herbs, and a pinch of salt. Stir until smooth.
  4. Heat a skillet over medium-high heat. Cook beef in batches for 2–3 minutes per side until browned and cooked through.
  5. Warm pita breads in a dry skillet or oven wrapped in foil.
  6. To assemble, spread yogurt sauce on each pita, add greens, beef, and top with sumac onions.
  7. Serve immediately, optionally with lemon wedges or extra herbs.

Notes

  • Marinate the beef up to 24 hours in advance for deeper flavor.
  • Double the yogurt sauce and use it as a dip or salad dressing.
  • Warm pitas just before serving to keep them soft and pliable.
