- 1 lb beef sirloin or flank steak, thinly sliced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp garlic powder
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 large red onion, thinly sliced
- 1 tbsp sumac
- 2 tbsp lemon juice
- 1 cup Greek yogurt
- 1 garlic clove, minced
- 2 tbsp fresh mint or parsley, chopped
- 4 pita breads
- 1 cup lettuce or arugula
Instructions
- In a bowl, combine beef slices with cumin, coriander, paprika, garlic powder, salt, pepper, and olive oil. Toss well to coat.
- In another bowl, mix red onion with lemon juice and sumac. Let it sit for at least 10 minutes to soften and absorb flavor.
- In a third bowl, combine Greek yogurt, minced garlic, chopped herbs, and a pinch of salt. Stir until smooth.
- Heat a skillet over medium-high heat. Cook beef in batches for 2–3 minutes per side until browned and cooked through.
- Warm pita breads in a dry skillet or oven wrapped in foil.
- To assemble, spread yogurt sauce on each pita, add greens, beef, and top with sumac onions.
- Serve immediately, optionally with lemon wedges or extra herbs.
Notes
- Marinate the beef up to 24 hours in advance for deeper flavor.
- Double the yogurt sauce and use it as a dip or salad dressing.
- Warm pitas just before serving to keep them soft and pliable.
