- 700 g beef stew meat, cut into chunks
- 3 large potatoes, peeled and cut into cubes
- 2 medium onions, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 400 g crushed tomatoes
- 350 ml beef broth
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the beef chunks and sear until browned on all sides to build flavor.
- Add the chopped onions and cook until soft and golden. Stir in the garlic and ginger until fragrant.
- Stir in curry powder, turmeric, cumin, coriander, and paprika. Coat the beef and onions in the spices, then add crushed tomatoes and mix well.
- Pour in the beef broth, season with salt and pepper, and bring to a simmer. Cover and cook for 40 minutes. Add the potatoes and cook another 25 to 30 minutes until tender and the sauce thickens.
Notes
- Use well marbled beef for extra tenderness.
- Curry tastes even better the next day as the flavors deepen.
- Add potatoes later to prevent them from becoming mushy.
