Description

A rich, comforting Beef & Potato Curry made with tender beef, soft potatoes, warm spices, and a silky tomato based sauce. Hearty, aromatic, and perfect for cozy dinners.


Ingredients

  • 700 g beef stew meat, cut into chunks
  • 3 large potatoes, peeled and cut into cubes
  • 2 medium onions, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 400 g crushed tomatoes
  • 350 ml beef broth
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the beef chunks and sear until browned on all sides to build flavor.
  2. Add the chopped onions and cook until soft and golden. Stir in the garlic and ginger until fragrant.
  3. Stir in curry powder, turmeric, cumin, coriander, and paprika. Coat the beef and onions in the spices, then add crushed tomatoes and mix well.
  4. Pour in the beef broth, season with salt and pepper, and bring to a simmer. Cover and cook for 40 minutes. Add the potatoes and cook another 25 to 30 minutes until tender and the sauce thickens.

Notes

  • Use well marbled beef for extra tenderness.
  • Curry tastes even better the next day as the flavors deepen.
  • Add potatoes later to prevent them from becoming mushy.
