Description

A hearty and comforting beef and potato curry packed with tender meat, creamy potatoes, and rich, aromatic spices. Perfect for cozy nights or make-ahead meals.


Ingredients

  • 1.5 lbs beef chuck or stewing beef, cubed
  • 3 medium Yukon Gold potatoes, peeled and cubed
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 medium tomatoes, chopped
  • 1 cup coconut milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin seeds
  • 1.5 teaspoons salt
  • 1 cup water or beef broth
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat a large Dutch oven or pot over medium heat with vegetable oil.
  2. Add cumin seeds and let them sizzle. Toss in chopped onions and sauté until golden. Stir in garlic, ginger, curry powder, and turmeric. Cook for 1 minute.
  3. Add beef cubes and brown them on all sides. Stir in chopped tomatoes and cook until they break down.
  4. Add potatoes, coconut milk, water or broth, and salt. Mix well and bring to a simmer.
  5. Cover and cook on low for about 1.5 hours, or until beef is tender and potatoes are soft. Stir occasionally.
  6. Sprinkle with fresh cilantro before serving.
  7. Serve over rice or with warm naan and enjoy!

Notes

  • Use a heavy-bottomed pot to prevent burning.
  • Let the curry rest for 15 minutes after cooking for deeper flavor.
  • Add a splash of water when reheating to loosen the sauce.
  • Adjust the spice level to your preference by adding or reducing chilies.
