- 1.5 lbs beef chuck or stewing beef, cubed
- 3 medium Yukon Gold potatoes, peeled and cubed
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 medium tomatoes, chopped
- 1 cup coconut milk
- 2 tablespoons vegetable oil
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin seeds
- 1.5 teaspoons salt
- 1 cup water or beef broth
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat a large Dutch oven or pot over medium heat with vegetable oil.
- Add cumin seeds and let them sizzle. Toss in chopped onions and sauté until golden. Stir in garlic, ginger, curry powder, and turmeric. Cook for 1 minute.
- Add beef cubes and brown them on all sides. Stir in chopped tomatoes and cook until they break down.
- Add potatoes, coconut milk, water or broth, and salt. Mix well and bring to a simmer.
- Cover and cook on low for about 1.5 hours, or until beef is tender and potatoes are soft. Stir occasionally.
- Sprinkle with fresh cilantro before serving.
- Serve over rice or with warm naan and enjoy!
Notes
- Use a heavy-bottomed pot to prevent burning.
- Let the curry rest for 15 minutes after cooking for deeper flavor.
- Add a splash of water when reheating to loosen the sauce.
- Adjust the spice level to your preference by adding or reducing chilies.
