- 4 medium potatoes, peeled and chopped

- 4 cups beef broth
- 2 tablespoons olive oil
- 2 tablespoons flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 2 bay leaves
Instructions
- Heat a large pot over medium heat and add olive oil.
- Season the beef with salt and pepper, then coat lightly with flour.
- Add the beef to the pot and brown on all sides until golden.
- Add onion, garlic, and tomato paste, then stir until fragrant.
- Pour in beef broth, add potatoes, carrots, and bay leaves, then simmer on low heat for 1.5 to 2 hours.
- Remove bay leaves, adjust seasoning, and stir in fresh parsley.
- Ladle into bowls and serve warm.
