  • 2 beef tenderloin steaks (6 to 8 ounces each)
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cups sliced mushrooms (cremini or button)
  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 2 cups low sodium vegetable or beef broth
  • 1 cup cream or half and half
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Pat the beef tenderloin steaks dry and season generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium high heat. Sear the steaks for 3 to 4 minutes per side until a deep golden crust forms. Transfer to a plate to rest.
  3. Lower the heat to medium and add butter to the same skillet. Add sliced mushrooms and cook until golden. Stir in the shallot and garlic until fragrant.
  4. Add the orzo to the skillet and stir to coat in the mushroom mixture. Pour in the broth and simmer for 8 to 10 minutes, stirring occasionally, until the orzo is tender.
  5. Stir in the cream, Dijon mustard, and thyme. Allow the mixture to thicken into a creamy sauce. Season with salt and pepper.
  6. Slice the rested beef tenderloin or serve whole on top of the mushroom orzo. Garnish with fresh parsley before serving.

  • Patting the steaks dry ensures a perfect crust when searing.
  • If the orzo becomes too thick, add a splash of warm broth to loosen it.
