Description

A cozy, slow-cooked dish featuring tender shredded beef in a rich tomato sauce, perfectly wrapped around ribbons of pasta. It’s a hearty, soul-warming meal inspired by Italian comfort food, perfect for family dinners or special gatherings.


Ingredients

  • 800 g beef chuck, cut into large chunks
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp ground black pepper
  • 1 tsp fine sea salt
  • 500 g crushed tomatoes
  • 500 ml beef broth
  • 2 tbsp tomato paste
  • 350 g pasta (pappardelle, rigatoni, or tagliatelle)
  • 1 handful fresh parsley, chopped
  • 1 handful freshly grated Parmesan cheese

Instructions

  1. Heat olive oil in a heavy pot over medium-high heat. Sear beef chunks on all sides until deeply browned, then remove and set aside.
  2. In the same pot, sauté onions, carrots, and celery until soft and slightly golden. Add garlic and cook for 1 to 2 more minutes.
  3. Add smoked paprika, oregano, salt, black pepper, and tomato paste. Stir until vegetables are well coated.
  4. Pour in crushed tomatoes and beef broth. Stir to combine and bring to a simmer.
  5. Return the beef to the pot, cover, and simmer on low for 2.5 to 3 hours until beef is fork-tender.
  6. Remove beef, shred with forks, and return to the sauce. Stir to combine well.
  7. Boil pasta in salted water until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  8. Mix pasta into the braised beef sauce, adding reserved pasta water to adjust consistency.
  9. Serve hot, topped with chopped parsley and Parmesan.

Notes

  • Use beef chuck for best flavor and tenderness.
  • Simmer uncovered at the end if sauce needs thickening.
  • Store leftovers for up to 3 days for even deeper flavor.
  • Great with fire roasted tomatoes or extra herbs like thyme or rosemary.
