- 800 g beef chuck, cut into large chunks
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp ground black pepper
- 1 tsp fine sea salt
- 500 g crushed tomatoes
- 500 ml beef broth
- 2 tbsp tomato paste
- 350 g pasta (pappardelle, rigatoni, or tagliatelle)
- 1 handful fresh parsley, chopped
- 1 handful freshly grated Parmesan cheese
Instructions
- Heat olive oil in a heavy pot over medium-high heat. Sear beef chunks on all sides until deeply browned, then remove and set aside.
- In the same pot, sauté onions, carrots, and celery until soft and slightly golden. Add garlic and cook for 1 to 2 more minutes.
- Add smoked paprika, oregano, salt, black pepper, and tomato paste. Stir until vegetables are well coated.
- Pour in crushed tomatoes and beef broth. Stir to combine and bring to a simmer.
- Return the beef to the pot, cover, and simmer on low for 2.5 to 3 hours until beef is fork-tender.
- Remove beef, shred with forks, and return to the sauce. Stir to combine well.
- Boil pasta in salted water until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- Mix pasta into the braised beef sauce, adding reserved pasta water to adjust consistency.
- Serve hot, topped with chopped parsley and Parmesan.

- Use beef chuck for best flavor and tenderness.
- Simmer uncovered at the end if sauce needs thickening.
- Store leftovers for up to 3 days for even deeper flavor.
- Great with fire roasted tomatoes or extra herbs like thyme or rosemary.
