A comforting and hearty pasta dish made with slow-braised beef simmered in a rich tomato sauce, then tossed with tender pasta for a deeply satisfying, cozy meal.
Ingredients
- Beef chuck: 900 g, cut into large cubes
- Olive oil: 2 tablespoons
- Onion: 1 large, finely chopped
- Carrots: 2 medium, diced
- Celery: 2 stalks, finely chopped
- Garlic: 4 cloves, minced
- Tomato paste: 3 tablespoons
- Crushed tomatoes: 800 g
- Beef broth: 750 ml
- Dried oregano: 1 teaspoon
- Dried thyme: 1 teaspoon
- Bay leaf: 1 leaf
- Salt: 1 teaspoon, or to taste
- Black pepper: 0.5 teaspoon
- Pasta (pappardelle or rigatoni): 400 g
- Parmesan cheese: 50 g, finely grated
Instructions
- Heat olive oil in a heavy pot over medium heat and brown the beef cubes in batches until deeply seared on all sides. Remove and set aside.
- Add onion, carrots, and celery to the same pot and cook for about 8 minutes until softened and fragrant.
- Stir in the garlic and cook for 1 minute until aromatic.
- Add the tomato paste and cook for 2 minutes, stirring, until slightly darkened.
- Pour in crushed tomatoes and beef broth, then add oregano, thyme, bay leaf, salt, and black pepper. Stir well.
- Return the beef to the pot, cover, and simmer gently on low heat for about 2 hours until the beef is very tender.
- Cook the pasta in salted boiling water according to package instructions, then drain.
- Toss the cooked pasta with the braised beef and sauce until well coated, then serve topped with grated Parmesan.
Notes
- Brown the beef thoroughly for the best depth of flavor.
- Simmer gently to ensure the beef becomes tender and juicy.
- Reserve a little pasta water to loosen the sauce if needed.
- The sauce tastes even better the next day after the flavors develop.
